Bacon


Making real bacon takes a bit of work. You have to get some fresh pork belly, of which we had plenty, and rub it down with the spices of your choosing. The recipes always have salt to preserve and draw out moisture, and we also used brown sugar, fresh ground pepper and maple syrup.

Every few days you have to rub it down again and switch the pieces from bottom to top. 





Then you rinse it off and soak it in fresh water to remove some of the saltiness. 


Yep, it's in the bathtub. Bet you never had ground pepper in there, heh. 



Time for tasting....yum. The meat part isn't bright pink because we didn't use any nitrites or preservatives. Ok by me, it's tasting mighty fine. The boys keep asking for more, but it still needs to be smoked. That will happen tomorrow.
